Our Great Taste Awarding Ginseng Oolong is made from Tie Guan Yin leaves from Anxi County in the Fujian province of China, and is farmed using biodynamic farming methods.  It is made using a fairly complex process:

Plucking - drying - cooling - tossing - drying and oxidation - repeating then - drying and tossing - stopping oxidation - curling-  drying - blending - sorting - grading - packing.

The Tie Guan Yin is produced in the traditional way, it is one of the most famous oolongs and is also known as the Iron Goddess of Mercy.  Once rolled and dried the tea leaves are then coated in the powdered mixture of ginseng and licorice to give its unique fragrant, sweet and smooth taste.  It gives a lasting lingering sweetness on the tongue and is a perfect afternoon tea or to be drunk after meals, as oolong tea is a natural digestive.
