Yellow Tips
This yellow tea is made from the same tea plant as our Mao Feng green tea but the leaves are picked a lot earlier.
The tea brews to a light green colour which makes some people question whether it is a yellow tea or a green tea. Huang Ya is a yellow tea as it has an extra processing step compared to green tea processing. Instead of being dried straight away, yellow teas are gently heated in a humid environment to allow oxidation to occur. The end result for this tea is a refreshing peppery taste that is (as with many yellow teas) quite subtle. There is no bitterness to this tea and the taste can be described as being smooth and sweet.
Huang Shan Mao Feng
This is one of China's 10 famous teas. The name Mao Feng is a term in tea manufacture denoting the picking of a bud and two leaves of equal length or a bud and a single leaf. It is harvested in early spring, pre-Qing Ming.
An Ji Bai Cha
Despite its name, An Ji Bai Cha is actually a green tea not a white tea. This is because the leaves are pan-fired, giving them a jade-white colour. It infuses to a very pale green colour, and has a taste that is delicately soothing, with a hint of citrus sweetness in the aroma.

Yellow Tips Brewing Guide
3-4g in an average sized teapot, use boiled water cooled to 70°C. Infuse for 2-4 minutes, depending on taste. Re-steep up to 3 times.
Mao Feng Brewing Guide
3-4g in an average sized teapot, use boiled water cooled to 75°C. Infuse for 2-4 minutes, depending on taste. Re-steep up to 3 times.
Anji Bai Cha
3-4g in an average sized teapot, use boiled water cooled to 75°C. Infuse for 2-4 minutes, depending on taste. Re-steep up to 3 times.
Store in a cool dry place away from direct sunlight.
